Baked Candy Cookie Brownies "Brookies" Bars

Like I have said in some previous posts, I knew the kitchen in this new apartment was going to be 100x better than any other kitchen we have had and therefore I wanted to bake a lot more. Since being in the apartment for 1 week, I have decided to make a mix of a few of our favorite things: cookies, brownies and candy! In this recipe I am using a box mix that I found at the store for “Brookies” but you can also make a cookie batter and a brownie batter if you want more of a home made flair (though, box is just as good). 

ADDING CANDY 

I am a candy fanatic and so I wanted to mix chopped up pieces of candy into the mixture to 1. Get rid of most of the candy in my freezer and 2. To make my life a whole lot better. I was never allowed to have candy as a kid so as an adult, I go a little overboard. To be honest, when I see candy, I buy candy. If I am at work and there is candy I will eat it and there is always a full bowl of candy in my kitchen. I really take candy seriously. Though I am not the biggest chocolate lover, I do prefer gummy candy (I know, unpopular opinion) . I felt that this recipe would incorporate the candy in a way that would be a total 10/10.

This recipe would also be great for all the leftover Halloween candy that you may have in your house and want to get rid of. I also used some leftover rainbow chocolate chips from the Cosmic Brownie recipe, but I feel like sprinkles would work just as good here! 

PREP TIME COOK TIME 

 15-20 min     30 min 

EQUIPMENT

  • 9 x 13in Pan 

  • 2 Medium Sized Bowls

INGREDIENTS 

  • 1 Box of Brookies Mix 

  • 2- 3 Chopped Candy Bars 

  • Rainbow Chocolate Chips or Sprinkles 

THE RECIPE 

  • Preheat the oven to 325 and grease a 13 x 9 baking pan 

  • Next chop up the candy bars...all that amazing chocolaty goodness. I used a mix of Reese's, Kit Kats and chocolate mini coated chips. You can use M&Ms here as well. Really any of the candy that you want can be put in there. I chopped everything up into really small pieces. It was about 2 cups worth of candy, which is perfect to mix into the batter and sprinkle on top before going into the oven.

  •  In two separate bowls, mix together according to the box instructions the brownie batter and the cookie batter. I personally add a bit extra to my box mixes so this time I added some additional oil and a bit more water. 

  • I then added most of the candy to the cookie batter and continued mixing until the candy is well combined into the dough.

  • Now, fill the pan with the brownie batter, flattening it out to cover the whole pan. You should have a good base layer here.

  • Then, take the cookie dough and break it into small drops, plop it into the brownie batter. It will pretty much rest on top so you can flatten it out a bit to create a more consistent cookie layer on the top. It will not cover the whole top, but instead create some sort of a swirl.

  • Once everything is in the pan, sprinkle the rest of the candy onto the top and add some sprinkles for color if you would like! 

  • Place in the oven and bake for about 30- 35 minutes depending on your oven. I then let mine cool for about 45 minutes (the hardest part indeed).

TRIPLE THE YUM

Once your brookie is completely cooled you can cut into it and enjoy those amazing, perfect, “candy” bars. They will be everything you have hoped for and more. I feel like you could also add a bit of ice cream to the top that could be life changing. I mean who doesn't love a mix of cookies, brownies, and candy all in one dessert?! XOXO
