DIY Cosmic Brownies

Who doesn’t love a good Little Debbie treat?? Well, KC really loves cosmic brownies. When we first started dating I used to get them for him every time I saw them. To be honest I still do that, but they are hard to find in our earlier! Normally for Valentine’s Day I get him a new backpack and fill it with boxes of cosmic brownies. Today is February 23 2020 and for the past 7 years we have celebrated every 23 in the year. For this month I wanted to make my own cosmic brownies to celebrate! Follow along if you want to make your own as well.

ingredients:

-Box of brownie mix

 -Rainbow chocolate chips

-1 cup of semi sweet morsels 

-1/2 cup of milk chocolate chips 

-1/2 cup of heavy cream 

-13x9 cake pan

The real star of this show is the mini rainbow chips because it is not a cosmic brownie without these amazing chips! 

~ Preheat your oven to 350 ~

Step One: First, take your 13x9 pan and line it with aluminum foil or parchment paper. Spray the pan with a light coating of spray. This makes it way easier to get the brownies out in the end. 

Step Two: Next, follow your box instruction to mix up the brownie mix and pour it into the pan. Bake according to the box and your oven (every oven is different) 

Step Three: Now, while the brownies are baking make the ganache you go on top of the brownies. In a bowl mix the semi sweet chips, milk chocolate chips and heavy cream. Start by microwaving for 1 minute on hand power and mixing for 1 minute. Repeat that one more time until you have created a rich chocolate ganache.

Step Four: Pour the ganache over the brownies when they are out of the oven and spread evenly  over the brownies. Sprinkle the chocolate chips over the top. 

That is it! Once they cool and the ganache is all set cut into them and get yourself a slice of childhood! Depending on how you cut them, you could have 24 brownies which is great because you will want more than one. I served these to KC warm with a glass of milk and he was more than happy! Enjoy baking!
